Easy Avocado Ice cream Recipe


A couple of weeks ago I tweeted my desire to make avocado ice-cream with edible flowers. I finally got to make it this week and the result was absolutely divine, even if I say so myself. Here is how I made it.



Ingredients:
4 avocados
300ml whole milk
150g caster sugar
1 vanilla pod
Juice of 1 lime or 4 tbsp bottled lime juice

Method:
Chop the avocados and blend them into a fine paste, adding 150 ml milk. In a saucepan add the sugar, lime juice and vanilla pod and bring to a boil. Cool the mixture and remove the vanilla pod. Add the sugar mixture to the avocado puree in a large bowl. Now Add the remaining milk. Freeze the mix in an airtight box. Whisk with a blender or fork every few hours to ensure a smooth consistency and to reduce crystallisation. The ice cream is ready to eat as soon as it is frozen. It takes less than 30 mins to prepare and a few hours to set. Alternatively, use an ice-cream maker for more instantaneous results.

Note: Before you freeze the mixture, taste to see if you are happy with the flavour. Adding some extra lime juice/ sugar mixture increases the depth of flavour and you may choose to do so.



Whilst my original idea was to add chocolate or edible flowers, the ice-cream is best served without anything else.

Rethink your drink

We all know that giving children fizzy drinks is never a great idea because they are high in sugar and have very little nutrients. Some contain the equivalent of eight heaped teaspoons of sugar, which can not only contribute to weight gain as they don't make your child feel full, but can also damage their teeth. And now health experts have calculated there's even more sugar in some smoothies and health drinks. While there are no recommendations on the number of sugary drinks that are allowed, parents should limit them as best they can.


Research has shown that children aged four to ten years get 16% of their sugar intake from soft and fizzy drinks and soft drinks were the largest contributor to sugar intake for children aged four to eighteen years.  These are frightening figures because when kids drink too much juice, juice or sport drinks their intake of milk declines and they get too little calcium for their growing teeth and bones.

Whether its fruit juice or fizzy drinks, the source of the sugar doesn't matter as any sugar the body doesn't need will be converted to fat. Also, when children have these drinks on an empty stomach, the body takes in sugar so quickly, insulin spikes and then drops suddenly, leaving them feeling hungry.   50% of UK children are now overweight so limiting these drinks is more important than ever.

So what can parents do? Limit the drinks for special occasions only like parties or holidays; dilute fruit juices with water; try flavoured water or de-caffeinated tea for a change. But the easiest and clearest message for all - milk or water should be a child's only choice.

We need to empower our children to make their own decisions and to teach them that too many fizzy drinks, fruit juice or sweet drinks are bad for their bodies. Change doesn't happen overnight, but we can start making small steps today and make it happen today.

How to pack a lighter picnic

Everyone has fond memories of picnicking as a child because, quite honestly, when the sun’s shining, what better way to spend an afternoon than packing up the hamper and heading to the park/seaside/back garden? Picnics do come with a health risk, though (high-fat sausage rolls, cakes, fizzy drinks…), so to celebrate National Picnic Week (16–22 June), we’ve put together some of our favourite tried and tested recipes for a healthier outdoor feast.

Cheese and chutney scones
These are super tasty warm from the oven, so you’ll have to try your best to save some for the hamper!

Prep 10 min
Cook 20 min
Makes 12

30g low-fat spread, plus extra to grease
350g self-raising flour, plus extra to knead
75g reduced-fat mature cheese, grated
1tsp dried sage
250ml skimmed milk
75g caramelised red onion chutney

1) Preheat the oven to 200°C/fan 180°C/gas 6. Rub the spread into the flour to form fine crumbs. Add three-quarters of the cheese and the sage and mix well. Add the milk to form a soft dough.
2) Lightly knead the dough on a well-floured surface and use a cutter to make 12 scones. Put them on a greased baking tray, spread chutney over the top of each scone and add a sprinkle of the remaining cheese.
3) Bake for 17 min or until golden (see picture, above)

Per scone: 141kcal, 2.5g fat, 3.8g sugar, 0.5g salt


Portuguese chicken
This will add a punchy flavour to your picnic and it’s great for eating with your fingers. Don’t forget to take along the wet wipes…

Prep 5 min, plus marinating
Cook 40 min
Serves 8

2tbsp hot peri peri sauce
2tsp olive oil
Juice of 11⁄2 lemons, plus 1 lemon, thinly sliced with pips removed
11⁄2tsp dried oregano
600g skinless chicken breast fillets
600g skinless and boneless chicken thigh fillets
2tbsp flatleaf parsley, chopped

1) Combine the peri peri sauce, oil, lemon juice and oregano in a large bowl.
2) Cut each chicken breast into three pieces and the thighs into two or three, depending on their size. Add to the marinade, cover and chill for 3–4 hr or overnight.
3) Preheat the oven to 200°C/fan 180°C/gas 6. Line a baking dish with baking paper and arrange the chicken in a single layer. Scatter over the lemon slices and cook for 30–40 min or until cooked through.
4) Transfer the cooked chicken to the container you’ll be taking to the picnic and immediately store in the fridge, uncovered, until chilled. Keep cool until ready to eat and sprinkle with parsley just before serving.

Per serving: 172kcal, 3.8g fat, 0.4g sugar, 0.5g salt


Leek and courgette quiche
Quiche is traditional picnic fare, but our madeover version has fewer calories and less fat (including saturates).

Prep 10 min
Cook 1 hr 15 min
Serves 6

Cooking oil spray
320g ready-rolled, reduced-fat shortcrust pastry, defrosted if frozen
1 medium leek, thinly sliced
2 medium courgettes, thinly sliced
1 garlic clove, crushed
5 eggs
5tbsp skimmed milk
50g goat’s cheese, crumbled
Fresh herbs, to garnish

1) Preheat the oven to 200°C/fan 180°C/gas 6 and lightly spray a 24cm fluted tin with oil. Roll out the pastry so it’s slightly thinner, then use it to line the tin, trimming any excess pastry with a sharp knife to neaten the edges.
2) Put the flan tin on a baking tray. Cover the pastry with a sheet of baking paper, then pour in baking beans or rice and bake for 15 min. Remove from the oven and discard the beans or rice and paper, then bake for a further 5 min or until golden.
3) Meanwhile, put a large frying pan over a medium heat and spray with a little oil. Add the leek and courgettes and cook for 15–20 min until very soft, stirring occasionally – if necessary, add 1–2tbsp water to help cooking. Add the garlic and cook for a further 2 min, then spoon the mixture into the baked pastry case.
4) In a jug, whisk the eggs with the milk, then pour over the leek and courgette mixture. Sprinkle with the goat’s cheese, then bake for 25–30 min until the filling is set. Remove from the oven, then leave to stand in the tin for 5 min.
5) Garnish the quiche with the herbs, then slice.

Per serving: 334kcal, 18.1g fat, 8.8g sugar, 0.8g salt


Mangetout salad
Take this easy green salad along to go with the chicken or quiche. You don’t want it to go soggy, though, so toss the leaves in the dressing at the last moment.

Prep 5 min
Cook 2 min
Serves 4

325g mangetout
100g bag mixed salad leaves
1 cucumber, sliced into ribbons using a vegetable peeler
2tbsp snipped fresh chives
2tbsp balsamic vinegar

1) Blanch the mangetout in a pan of boiling water for 1 min or until bright green and tender-crisp. Drain in a colander, then refresh under cold running water.
2) Put the mangetout in a bowl with the remaining ingredients and toss to combine, then serve.

Per serving: 49kcal, 0.4g fat, 6.6g sugar, 0g salt

Medieval England Via Morocco: Peterborugh Christmas Market



Peterborough often gets bad press for not being quaint enough compared to Cambridge and cool enough compared to London. The fact is that the city has rich history, decent shopping, quaint villages surrounding (and within) it, great transport links and a lot to offer. It is also a popular commuter town due to the lower house prices compared to Cambridge or London. This Peterborough bashing bothers me most when I attend events like the Cathedral Historic Christmas Fayre. It was quirky and unlike any other Christmas market I've seen yet did not attract the same volume of crowds as some of the other markets. The Berber market in the Cathedral square was a feast to the eyes and yet it was the same story there too. This blog post is my little attempt at putting the cool back into the city I now call home. I am also framing a Peterborough travel post in my mind as I write this. Watch this space.



The Christmas market in Peterborough had two distinct sections this year. The Moroccan Berber market (selling beautiful glass-works, painted tagines, tapestry and sheeshas) and the Historic Christmas Market with medieval themed stalls where vendors dressed in period costume advocated back to basics washing routines, falconry, knightly pursuits and sold unusual yet Christamassy goods.The Cathedral green formed the setting for a fireworks/fire-eating display led by a couple of medieval monks. The market had a spooky cool factor about it for reasons I am struggling to pinpoint. It was perhaps that whole historic, going back to your roots theme or perhaps because I thought the spirit of Katherine of Aragon (buried in the cathedral) was drinking mulled wine in the sky!


Whilst the market has numerous fascinating stalls with things my foreign self had not come across before, I'd like to mention two particularly interesting stalls. The first was Suzie and Martin's stall selling fruit leathers and exotic jerked meat. Beef marinated in wasabi sauce, venison, port and cranberry jerky, hibiscus and apple fruit leather, this stall had the most random yet interesting preserved foods I've come across. I am looking forward to using their pear fruit leathers in desserts and ice-cream over the holiday period. The other marvellous stall belong to Scott and Sally Mittuch of Natural Spa Supplies. Scott explained how the humble alum could be used as an after-shave product, deodorant and more. Scott also explained the benefits of rhassoul clay , argan oil  and the back to basics approach to personal care. It reminded me of childhood summer holidays in Kerala where my cousins and I used freshly ground turmeric for facials and freshly extracted coconut oil for hair care. Time to get over my fixation with Elemis and Kerastaste perhaps? Or should I start a section on ethical washing ;-) ?! Ann x

Hambleton Hall and the Art of Fine Dining

 
In an era where casual dining and lack of formality (whatsoever) seems commonplace, visiting Hambleton Hall felt like time-travel.  I've been reading a few lifestyle blogs and books of late that bemoan the lost art of civilised dining. How often do you have your table perfectly laid, well presented and all your best crockery and cutlery out? Chances are, probably when you entertain? I must confess I've done my fair share of slobbery and we still sometimes choose to sit and eat in front of the television too. I have feeling that after our little visit to Hambleton Hall, all that is about to change.



I have to thank my friend Rosie for a) pointing out the lunch for less offer b) convincing Ed to actually go ( can you believe it!). Previously, thanks to various posh tales, I'd always envisaged the Hambleton Hall to be somewhere I'd fancy going for a glass of sparkling water due to its limited affordability. However, the lunch for less offer meant you got to actually have a proper two course meal for just £24 ( plus service tax)!! Assuming it was a winter offer, I quickly booked us in for Saturday lunch. I had to book about a month in advance. I now understand that the offer runs all year and gets slightly cheaper in winter. 


On arrival, we were ushered into the drawing room where we ordered our pre-meal drinks and engaged in seemingly civilised talk (I was actually quietly telling off Ed for not dressing up enough). I'm usually over-dressed to most places but here, I just about fitted in. I will do a separate outfit post shortly. There were a couple of elderly couples and a small group of younger couples/friends sat around us in the drawing room. Everyone was dressed like they were going to a very fancy wedding. The couple that sat across from us were particularly cute as the gentleman treated his partner with such quaint and old-fashioned chivalry. We stayed in the drawing room for a while, consuming complimentary amsue bouche, sipping cocktails  and pondering over menu choices. Eventually, we were escorted in to the dining area.



We chose from the set menu and opted out of starters. I ordered trout for my main course and Ed had lamb. Whilst the menu was unassuming, the food itself was pretty spectacular. The combination of exquisite flavours and textures plus the stunning presentation made our meal a phenomenal experience. Ed and I like fine dining and have been to plenty of fancy restaurants but this place was rather special. Just when we were thinking it couldn't get better, our desserts arrived. My apple crumble souffle with a dessicated slice of apple was otherworldly. Ed's cheesecake was simply spectacular looking and tasty too. Also, in between courses, the young waiter attending to us combed our table with a silver crumber. Clearly, attention to detail is all important at Hambleton Hall.
 

To finish off our fabulous meal, we ordered a cafetiere of freshly ground coffee. The coffee aromatic and delicious and accompanied by a tray of dainty macarons, jellies and chocolate. I was particularly taken by the mango jelly topped with popping candy. Mentally, I  started re-creating a grape version of the jelly with our allotment bounty from last summer. Ed and I went for a little stroll around Hambleton Hall before heading back home. I will do another outfit post including some of Ed's lovely photos of the gardens shortly. I can't wait to go back to Hambleton Hall again, hopefully in the summer.

Borage Flower Ice Cubes


I found some borage growing in our allotment and was scrounging around for ideas on what to do with them. I found this fab idea on the net that meant the flowers could be used for a long time and in pretty cocktails. All you do is wash the flowers put them into ice cube trays, fill the tray and freeze. I improvised and used sweet lime juice instead of water to make it a bit more interesting. Easy peasy! Ann x

P.S. Apparently borage is good for the spirits so if you are having one of those down times, trying munching on some flowers ( unless you are pregnant!)

DIY Wrapping Paper Art



I'm conscious that ever since the big move to Edinburgh a few weeks ago, I've had a very little time for most things, blogging included. It's been a time of massive change and we've had to downsize and sell most of our 'stuff' before moving up. On the positive, that felt quite liberating. Moving from a suburban house into a 100 something years old tenement flat in the centre of Edinburgh meant our style of decor needed a review too. The hallway in the flat has this quaint pew style sitting area and despite playing with a lot of our art and pictures, nothing seemed to work quite right there. I'd already bought these two beautiful sheets of  London print wrapping paper from Watermark (London Kings Cross) and was planning to create something arty with them: decoupage or framing were the two options I was exploring.  Framing these papers with an aged look felt like the perfect solution.  A trip to Ikea and £14 later, we got two super light frames and this was the result!

Method:
Simply frame and find a suitable place! You could also try framing patterned wrapping paper ( paper chase stock some great ones too) and source frames from charity shops.

Reflecting on 2012

I know its clichéd but retrospection, especially at this time of the year, is a healthy exercise. So as 2012 waves goodbye, I think it is appropriate that I stop and reflect on its adventures and experiences. It’s been a slightly kinder year for us than the previous two but it certainly brought its own share of challenges. I am grateful for the love and support from friends and family, and most importantly my wonderful husband, in overcoming them. Here is a photographic overview of some of the highlights of 2012, which if I haven't blogged about already, I will do soon.


The early part of 2012 brought with it interesting travel adventures, albeit accomplished in a  shoestring fashion. We spent New Year’s in India, travelled the whole length of the country ( mainly for family reasons) and spent a few lovely days taking in Rajasthani culture in the Lake City of Udaipur. In between Spring weekends toiling on our arid allotment, we also managed to fit long weekends in Paris (exploring fashion havens, cafes, farmers markets and gastronomically delightful restaurants like Suffren) and Barcelona ( marvelling at Gaudi’s masterpieces, partaking in Catalonian culture and cuisine, shopping at El Cortes Ingles and Zara, and hanging out at uber cool Bestial). Then came the great flood of 2012 making growing rice a better proposition than potatoes. We will be undertaking an appropriate flood risk assessment of our allotment plan for 2013.
 

The second part of the year was even busier and started with the London Olympics. I went to my first proper football match at Old Trafford (Manchester) as part of the Olympics and it was much more civilised than your regular football matches. Ed bought us a few Paralympics tickets too and attending that was an inspiring experience. The icing on the cake was to be able to witness the Victory parade in between my work meetings in London. During the Olympics period, we went to the Wapping Project which is a old power station converted into quirky and inspiring restaurant. Our allotment in the meantime was largely flooded and there was only so much we could do. Thankfully, my edible flower bed did very well and we had the most wonderful nasturtiums, violets, sweet williams and pansies. Closer to the year end, I visited and blogged about the Finnish, Lincoln and Peterborough Christmas Markets and also started a Charity & Vintage Shops section on my blog.  And, how can I not mention my shopping success at the avant-grade H&M Margiela collaboration!


Like every year, 2012 had its share of many firsts. These included dabbling in jewellery making, eating sea urchins, trying my hand at fencing, my first ever Olympic games, successfully making crab-apple jelly, pushing culinary boundaries with moong masala lasagne, visiting Gaudi's Barcelona, trying out new international recipes and bagging a bargain at London fashion weekend. The most important thing, in the context of this blog, was deleting my old bumbling blogs and starting all over again. And, I'm pleased with my reinvigorated blogging experience. I have a few things I'd like to achieve through this blog over the next year and I am looking forward to the adventures that 2013 will no doubt bring.  A special thank you to my readers (especially the few regulars) for reading whatever I paste out here and for your support. Once upon a time, in what seems like a lifetime ago, I used to hang out with a bunch of foreigners. We spent many evenings and weekends together, drinking, cooking and talking. What we had in common was our foreignness and disdain for the English reserve. What I remember most about those evenings was the cooking. We took turns to cook (mostly native cuisine) and I remember being introduced to some fabulous Thai, French and Asian food. One of the lads once cooked sushi and I was amazed at how simple it looked. Soon I set off to the local Chinese shop to  buy the sushi sudare, nori, wasabi et.al. and set about experimenting.  Making these pretty parcels was so satisfying. Time flew, life happened, differences appeared and foreigners went home. I stayed on, made new friends, found love and grew vegetables. Here's to old times and forgotten inspirations.




Tools and Ingredients:
Sushi sudare (rolling mat)
Sushi nori (seaweed)
Sushi rice-1 cup
Pickled sushi ginger
Japanese mirin (vinegar)
Wasabi paste
Soy sauce
Fillings- this could be a number of things including tuna from a tin, avocado, chicken, spring onions etc. This time I used mostly smoked salmon and finely chopped courgette and roast squash


Method: Cook the sushi rice as per the pack instructions. In a bowl mix  sugar and sushi vinegar for working with the rice.  Place the nori on the bamboo mat and thinly spread rice ( using the vinegar mix to dampen the rice). Add fillings of your choice about a third of the way up the nori. Carefully roll using the bamboo mat. There are plenty of YouTube videos out there showing you the technique. Once rolled, use a sharp knife and cut out the sushi rolls according to the size of your choice. Smaller the size, daintier they look but it also depends on the fillings. Serve with soy sauce, ginger and wasabi. Enjoy! Ann x

Coastal Chic


Back in 2010, the Dutch brand Spikers En Spijkers launched their SS11 collection with a nautical theme. I was smitten by some of the pieces there and watched with patience for my favourites to finally go on sale. I was particularly in love with this chic over-sized boat dress and watched it closely in the sales. Eventually one day, it reduced from its £250ish price tag to £27 in a 24 hour flash sale. I knew it was destined to be mine and at the right price. Who cares if it is a few seasons old?




The dress is really light and easy to wear  with a lovely origami style collar that makes it quite special. I like accessorising it with some of my favourite vintage style brooches and a pair of pointy silver pumps. I also dress it down sometimes with a pair of Keds. I'm all for versatile clothing. Besides, with all the warm weather recently, this dress has been an absolute blessing. Isn't it marvellous that we've actually had a summer this year (even it doesn't stay for much longer...) ?


Whilst we were back in Italy (Pizzo), and in between marathon coffee and gelato sessions at Enrico's, Ed took a few outfit shots of me by the Tyrrhenian sea. What better place to model my favourite boat dress?!
